1KW too big of power supply?

In the future, I may add a hard drive, and possibly another video card. Maybe CPU upgrade. My question: is the currently selected power supply overkill? Would I be better off going with a 850, 750, or even 560? Seasonic of course!

What kind of hardware would really require a full 1000W power supply?

    Yes, the power supply is technically overkill but going overboard on a power supply is never a bad thing if you can afford it. The less you tax a power supply the more efficient and reliable your PC stays. A power supply will lose life by placing a significant amount of stress over many years. Putting it in a position to never be stressed or maxed out ensures the power supply will last throughout the system's use.
